Easy Chicken Spaghetti


Once upon a time a HUGE snow storm hit our quaint town of Rexburg on the very day they we are pretty much out of food. {talk about good luck huh?} Let me put this into perspective for you. Outside there was a foot of snow on the ground, with a fresh, new layer of ice sitting on top. My windshield wipers were frozen over so when I tried to use them, I only made it harder to see out my windshield. Inside (my refrigerator) there were some carrot sticks, lemon juice, milk, a little bit of cheese, and I had some chicken or turkey burgers in our freezer. If I wasn't so picky, we wouldn't have a problem. However, that isn't the case, and the sound of turkey burgers made me want to throw up. {no I am not pregnant} So like any normal girl in this century would do, I turned to Pinterest for a solution! Here is what I found:

Ingredients:
2 cups cooked chicken, cut up
1 lb package uncooked spaghetti noodles
2 cans Cream of Chicken (or Cream of Mushroom) soup 
3 cups grated cheddar cheese
1 can diced tomatoes (you can also use fresh!)
1/4 cup onion, diced
1 t seasoned salt
 1 can chicken broth

** You could also add other vegetables like Peppers, mushrooms, zucchini, etc. (I just didn't have any of these)

Directions:
PRE HEAT OVEN TO 350. 

Put your cooked noodles in mixing bowl and stir in the 2 cups of cooked chicken. Then add your Cream of Chicken soup, 2 cups of grated cheese, diced tomatoes, seasoned salt, onions, and any other vegetables your little heart desires. Once you have mixed this pretty well, you want to slowly add the chicken broth. You don't want your spaghetti mixture to be too soupy. (I didn't end up using the whole can). 

Once your spaghetti mixture is prepared, Put mixture in a glass 9X13 greased casserole dish. Then put the remaining cheese on top. The recipe I found said cook it for 30-35 minutes or until hot and bubbly. I don't think I left it in there for that long... maybe 20-25 minutes? Either way, everything is already cooked inside. So no worries, you won't die.

You should probably know...

Since I have been posting oh so many pictures of  my cute girl, I decided maybe it's time you know some random facts about me. Some of you may already know these things, other may be hearing them for the first time. Either way, enjoy!


One: I am a member of The Church of Jesus Christ of Latter-daySaints. (aka: I’m a Mormon) My family and I have found that happiness comes from trusting in our Heavenly Father and His son Jesus Christ. I know I am a daughter of God and He knows me personally and loves me. Nothing brings me more joy than having that knowledge.

Two: I am married to the most amazing man in the whole entire world! We were married in the Logan, UT LDS Temple on August 19th 2011 and have been living a fairy tale ever since.

Three: I have so far been blessed with one beautiful daughter. Staying at home, playing with her and watching her grow and develop has brought me such happiness! Being a mother is my passion!

Four: I have a not so secret obsession with Diet Coke. Some may call it an addiction, but IT’S NOT! I promise I can stop any time! (I just don’t want to...)

Five: I have always had blonde hair with occasional highlights thrown in. But what some people may not know is I secretly want to dye my hair brown. I’m just a little bit chicken.

Six: I will be a college graduate in 1,788 hours. {Or you can just think of it as 74 days!} My degree is in Child Development and with that degree; I’m going to be a mom. J

Seven: The proudest moment of my week was when my sweet, innocent, constipated little girl finally pooped. Not once, not twice, but THREE times! Guess who isn't constipated anymore!?! Take that constipation! (TMI?)

Eight: When I was younger, I was obsessed with Hippopotamuses. I can't count how many hippo stuffed animals I collected and even gave a report in 5th grade all about hippos. Thus, my favorite Christmas song is "I want a hippopotamus for Christmas" Don't know what I'm talking about? Find it here! (you wont regret it.)

Nine: I am not a very experienced traveler, except maybe when I'm playing the game ticket to ride. (I'm pretty good at that game.) However, my dream vacation within the United States is to go to New York and go see Hairspray on Broadway.{Oh I might cry just thinking about how wonderful that would be.} and my dream vacation outside the United States is Ireland. Isn't Ireland the most beautiful country you ever seen? I mean, I haven't seen it, but in movies it looks REAL pretty. 

Ten: All growing up I HATED Chinese food and tomatoes  I wouldn't try them if you paid me. Then one day, my taste buds grew up and Chinese food is the most heavenly thing you can put in your mouth! {But tomatoes are still nasty}

Saturday Craft Day...

Saturday is a special day, it's the day you hurry up and get some crafts done because daddy is home to watch the baby. In the past I have not been a big crafter/DIY{er}. I mean come on, I've never even used Modge Podge (before tonight). But I am going to start DIY{ing} more. Some people find crafting relaxing. This is NOT the case for me. I find it being a big challenge. But I am going to try and and craft more and hopefully one day it will be a relaxing hobby for me.  

Today I did TWO crafts. Count 'em ONE, TWO! Yeah, I'm kinda on a roll! 

Project number ONE:


I really, really wanted to do a shadow box for Abbi with things from the hospital! I finally got around to it. The shadow box ended up being smaller than I thought, so it is just simple but still cute right? I can't wait to hang it up in her room!

Project number TWO:

L-O-V-E Letters! {Happy almost Valentines Day}

Usually the only holiday I decorate for is Christmas! I'm kinda a big Christmas fan. But after seeing quite a few post on cute decorations for Love Day, I decided to jump on board.

What you need:
*Chipboard Letters
*Scrapbook Paper
*Modge Podge
*Foam Paint Brush
*Nail File
*Ink pad (if you really want)


1: Trace around the letters on THE BACK of the scrapbook paper of your choice. For those of you who are crafty "challenged" like me, this also means to trace the letter backwards. That way it is everything matches up after you have traced the letter.


2: Use Modge Podge and paint the letters, then place the paper on the painted letter, and paint over the paper. (don't worry, it dries clear!) Also, make sure you rub out all the air bubbles before you paint over the paper with Modge Podge. I didn't do this and now I have air bubbles everywhere... (it was my first go with Modge Podge)

Then let the Modge Podge dry completely. 


3: Grab the nail file and file off any extra paper hanging off the sides. On a side note (get it? :), It helps if it is a newer nail filer and not one that has been used a lot, like the one pictured above. 

Here is where the Optional Step 3.5 comes in. If you want to grab an ink pad and rub it along the edges of the letter, it makes it look antique. Pretty cool! 


4: Put on a shelf (or hang up with a nail) and enjoy!

Thoughts on being a Mother.

I've heard a lot of opinions about when to get married, how long you should wait to have children, how many children to have, how far apart to have your children, etc. I probably can't appropriately express how passionate I am about this subject. This is such a personal issue and for each couple, the answer is different. I want to express to you today how important motherhood is to me.

I have wanted to be a mother since I knew what a baby was. I was ecstatic the day I got the call for my first babysitting job. Since then I have known; I want to be a mother. People ask what I want to be when I grow up, my answer was and still is, a mother. Now that I have a daughter, my passion for motherhood grows stronger and stronger each day.

All of the sleepless nights, being pooped on, screamed at and moments of having no idea what to do all disappear when my baby girl smiles, rolls over for the first time, finally eats her whole bowl of rice cereal, plays with her toys, etc.

Even with all those less than ideal times, I can tell you that my passion and desire to be a mother has not suffered one bit. People ask how many kids do you want? I answer 12. Part of me may be kidding, but I will take 1,2,3,4, or 10 more children. I want to be a mother to how ever many children God will entrust me with. Some may call me crazy for wanting a big family, and that is just fine with me. I will be a crazy woman with 12 kids and a husband standing behind me. We will be an army!

Weekend Party.

Enough said right? The weekend is a party in itself, but this particular weekend was spent with Nana and Grandpa! They make everything a party (even eating nasty rice cereal)...


And this weekend was a party because little Abbi got a homemade rocking horse from Great Grandpa Dave! It is incredible! We are so blessed to have such talented people in our lives. Check it out!

An instaHoliday...


Needless to say, we had a bunch of fun on our Christmas Break. We were able to go to Washington and spend Christmas with my family. It was pretty Chaotic but oh so fun. It was filled with eating out (a little too much), shopping, family time, mistletoe, All Day Date (oh yeah!), free food, free babysitting, and so much more. Seriously if you can't tell, it was kinda the best!

Our sweet Abbigail is 4 months old and I can't believe it! She has such a fun, LOUD, personality. Her absolute favorite thing to do is yell. She isn't necessarily angry when she yells, it is kinda all the time. Whether she is happy, sad, mad, excited, or hungry she just yells. {talk about an attention hog}. We kinda love her. :)

Now we are home in the good 'ol Rexburg. The temperature now is about -2 so I guess winter is officially here. For the record, I am so glad the heater works in our apartment!

School starts soon (like monday!) I only have ONE class left! {WOOHOO!} Graduation is SO close! Then I will be able to stay at home and give all of my attention to Abbigail. Just like she wants.
